Also, take your time. If you can't think of the answer right away, or answer confidently, say something like "I'm just going to think a moment before I answer." or reword their question with, "Just to clarify, you are asking me.....etctec?"
It buys you a little time and makes you look like a thoughtful person, vs a babbling/stuttering/nervous person.
It also depends on the job, but if you're interviewing for a position that doesn't require you to deal with customers face to face, you can always spin your nerves into a plausable/honest job perk. e.g. if the question is one of those stock "tell me your weakness" questions, you can tell them you get nervous in face-to-face situations so you always put in extra work to prepare and are very good at email communication or whatever.
